After reading about Nalo’s Mango

After reading about Nalo’s Mango Roasted Chicken in her newsgroup, I decided to try it on my own this afternoon. I got a slightly green mango and cut it into six parts. I cubed it and plopped the pieces on and around two chicken breast pieces (palm sized) in a small baking dish, and squeezed the skins and pit over the chicken to cover it in gooey mango juice goodness.

I dripped on half a tea-spoon of honey, fired the oven up to 450 degrees, and dropped it in for a while, and then washed all that sticky mango juice off my hands and forearms. I don’t know how long it cooked for. At least half an hour. I gauged the effectiveness by how good the apartment smelled.

As a side I had a salad mix (leafy greens, green beans, tomato, mushrooms, celery, banana peppers) and topped that with a raspberry vinagrette.

It was good. Yum.

Who ever said eating healthy had to taste bad
